Turkish pide bread is a soft and fluffy bread that is easy to make at home. This bread is made in under two hours and is topped with an egg wash and sesame seeds. A perfect bread for kids to make!

There is nothing better than fresh homemade bread! And there are so many amazing breads from all around the world, and it is so fun to offer different kinds of bread depending on what you are eating.

This bread recipe is perfect to bake with kids because it is easy and relatively quick, it uses common pantry ingredients you probably have on hand, and is a great recipe to make when you are learning to bake with yeast.

Pide is a traditional bread recipe that is served in Turkish homes. It is served all day, and specifically during the season of Ramadan. For more information on how you can teach your family about the importance of Ramadan, please check out Globe Trotting Kids.

How to make this bread recipe

This is a great easy bread to bake! For the full set of directions, please make sure you scroll down to the recipe card below.

Mix the dough

  1. In the bowl of a stand mixer, combine the milk, water, olive oil, salt sugar, yeast, and egg whites. 
  2. Mix until combined.
  3. Add the flour in batches until a soft dough forms. It will be quite sticky and that is perfect!
  4. Cover with a tea towel and allow to rest for 30 minutes.
  5. Generously flour the counter and dump the dough out.
  6. Knead for a few minutes, until you get a nice soft dough.
  7. Divide the dough into eight equal portions and shape each portion into a ball.
  8. Cover with the tea towel and allow to rest for 20 minutes.

Shape the dough.

  1. While the dough rests a second time, make the glaze and prepare the oven.
  2. In a small bowl, whisk together the egg yolk, yogurt, and water until combined.
  3. Line two baking sheets with parchment paper and set aside.
  4. Place 3 dough balls onto a prepared baking sheet, evenly spread out (I like to do one in each far corner and then one in the center closer to you – think like a mickey mouse shape but really spread out). Leave the other dough balls covered in the tea towel for now.
  5. Brush the glaze over the tops of the dough on the pan.
  6. Using your fingers, spread the dough out into a circle about ½” thick. You don’t want to roll or push it, just gently spread it.

Make the indentations

  1. Use your fingertips to make indentations of a circle about 1” from the edge of the dough.
  2. Use your fingertips to make four diagonal indentations (like a pound sign). If your fingers start to stick to the dough, dip them in the glaze.
  3. Sprinkle sesame seeds over the top of the dough.
  4. Cover with plastic wrap and allow the pan to rest while you preheat the oven.

Bake the bread

  1. Preheat the oven to 400 F with an empty baking dish on the bottom rack.
  2. Remove the plastic wrap and place in the oven to bake.
  3. Place 1 cup of water in the baking pan in the oven. This creates steam and helps the bread bake.
  4. Bake for 15-18 minutes, until golden brown.
  5. When you take the baking sheet out of the oven, place a paper towel over the bread to help trap the steam from the hot bread, this helps keep the bread soft.
  6. Repeat with remaining dough.

Storage Information

Store this bread in a bread bag or bread box for up to 2 days. You can also store it in an airtight container in the fridge for up to a week.

How to serve this to your family

This bread is good in so many different ways!

Serve it as part of a dinner with an egg dish like shakshuka, or with a soup or stew like lentil soup or with a kebab recipe like beef kofta.

Ingredients

Dough

  • 1 cup warm milk

    Hi. I am about to make this recipe and just need to check – In the ingredients list, under DOUGH, it says 1 egg yolk, but under the INSTRUCTIONS, it says egg whites. Which is correct please?

    1. Hi! The egg white goes in the dough, and the egg yolk goes in the glaze on top. Hope that helps!
