- Preheat the oven and spray a rimmed baking sheet with cooking spray.
- Place the quartered potatoes, red onion, bell pepper and kielbasa on the baking sheet.
- Drizzle with olive oil, sprinkle the southwest seasoning and toss to coat.
- Bake for 12 minutes.
- Add the tomatoes, black beans and sweet corns to the pan and toss with the rest of the ingredients.
- Bake for an additional 10 minutes.
