Cilantro lime rice is so flavorful and so simple. It really elevates regular rice into next level deliciousness. The cilantro and lime add awesome flavor and color to a meal, and are great for families who want to add more color, variety, and flavor to their meals.

Cooking rice in a rice cooker makes it SO simple! Its absolutely one of those kitchen appliances that if you have the cabinet space for, you should get! Instead of making it finicky on the stovetop, it turns into a set-it-and-forget-it recipe! That’s definitely a win on a busy weeknight!

How to wash rice.

Yes, you should totally wash your rice! Washing the rice before you cook it helps to remove the starchy powder residue that coats rice grains during packaging. By rinsing it off, you help to ensure that your rice cooks up nice and fluffy without getting clumpy and gooey. 

  1. Place your rice in a bowl or pot and cover with cool water.
  2. Use your hand like a claw and swish the rice around in the water a few times.
  3. Carefully drain off the water – see how cloudy it is? 
  4. Add more fresh clean water to your pot and swirl the rice around again.
  5. Repeat washing and draining your rice until the water you pour off is clear.

Cook the rice and season it.

  1. Add your clean rice to the pot of your rice cooker and as much water as recommended by your rice cooker manufacturer. Add in the olive oil, salt, and bay leaf.
  2. Cook according to your rice cooker.
  3. Meanwhile, remove the cilantro leaves from the steps and chop the cilantro finely. Juice the lime.
  4. Transfer the cooked rice to a bowl. Toss the chopped cilantro and fresh lime juice with the rice until well combined.
  5. Enjoy!

Inviting our kids into the kitchen with us is a great way to help them explore the world of food and be more open to trying new things.

This rice recipe is great because its so simple! They can practice measuring, working with fresh herbs, juicing fruit, and mixing ingredients.

  • Kids aged 1-3 can help you take cilantro leaves off the stems and measure ingredients.
  • Kids aged 4-6 can do everything above plus wash the rice, juice the lemon, learn how to use the rice maker, and chop the cilantro.
  • Kids aged 7-10+ can help you do everything above.

Ingredients

  • 1 cup long grain white rice
  • 1 teaspoon extra virgin olive oil
  • 1 teaspoon salt
  • 1 bay leaf
  • 3 Tablespoons fresh chopped cilantro
  • 1 lie zested and juiced

Instructions

  • Start by washing your rice until the water runs clear.
  • Add your clean rice to the pot of your rice cooker and as much water as recommended by your rice cooker manufacturer. Add in the olive oil, salt, and bay leaf.
  • Cook according to your rice cooker.
  • Meanwhile, remove the cilantro leaves from the steps and chop the cilantro finely. Juice the lime.
  • Transfer the cooked rice to a bowl. Toss the chopped cilantro and fresh lime juice with the rice until well combined.
  • Enjoy!

Notes

leftover rice can be stored in an airtight container in the fridge for up to 3 days.
