Sourdough Apple Cake
Sourdough Apple Cake is an easy dessert made with sourdough discard. A perfect fall dessert, this cake is studded with diced apples, spiced rum, and a simple icing drizzle. A perfect dessert, tea recipe, or even a breakfast treat!
Sourdough Apple Cake is a great sourdough dessert recipe that uses sourdough discard! Some of my other favorites are sourdough oatmeal cookies, sourdough pound cake, and sourdough sugar cookies.
You can never have too many good uses for your sourdough discard! This apple cake is a great fall treat (but is also great all year long!). Adding discard to a cake helps improve its texture and flavor – giving it a soft and springy crumb
How to make apple cake with sourdough starter
This recipe is an easy recipe to make! For the full set of directions, make sure to scroll down to the recipe card below. Here is a brief overview:
- Preheat the oven to 350 and prepare a 8” round pan with parchment paper and butter.
- Melt the butter. Peel and dice the apples.
- In a medium mixing bowl, whisk together the flour, baking powder, and salt.
- In a large mixing bowl, mix together the sourdough starter, eggs, brown sugar, melted butter, spiced rum, and vanilla extract.
- Gently fold the dry ingredients into the wet and mix until just combined. Pour the batter into the prepared cake pan and top with the diced apples.
- Bake for 40 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan completely.
- When cool, mix together the icing and drizzle over the cake.
*Optional: Add in 1 cup of chopped toasted walnuts for a fun twist!
You could also frost this cake with a traditional cream cheese frosting instead of drizzling it with a glaze, too!
How to serve this cake
This cake is lovely as is with a healthy drizzle of icing. You can also serve slices of this apple cake warm with a spoonful of good quality vanilla ice cream. Or serve it with a good dollop of whipped cream
What kind of sourdough starter do I need for this recipe?
This recipe uses 100% hydration starter. You can use either fed and active starter, or sourdough discard (sourdough starter that hasn’t been fed in a while). It does not matter what kind of flour your starter is fed with, either.

- 8 Tablespoons unsalted butter melted
- 3 baking apples cored and diced
- ½ cup all purpose flour
- 1 teaspoon baking powder
- ¼ teaspoon sea salt (affiliate link)
- ½ cup sourdough starter 100% hydration, room temperature
- ¾ cup brown sugar
- 2 eggs
- ¼ cup spiced rum
- 1 teaspoon vanilla extract
Instructions

- Melt the butter and set aside to cool for a few minutes.
