Tips for making the best homemade cakes:

  • Use room temperature ingredients. Its all about chemistry. When your ingredients are at room temperature, they create an emulsion that traps air, which expands during baking and creates soft and fluffy texture.
  • Don't overmix. After you cream the butter and sugar, you want to add the rest of the ingredients and mix until just barely combined. The more you mix, the tougher the crumb of the cake will be.
  • Don't overbake. Baking them too long makes a cake dry.
