The great thing about sourdough is that it can adjust to fit your schedule. Sometimes we have the time for complicated and technical bakes that create gorgeous loaves of bread.

And sometimes, we don’t.

But just because your schedule is busier and your time in the kitchen is less, that does not mean you need to give up on sourdough for good, or forget about it in the back of your refrigerator.

What kind of sourdough starter do I need for these recipes?

These recipes all use 100% hydration sourdough starter discard, or a starter that is fed equal amounts of flour and water by weight.
